So as a part of our meal plan an obvious weekend choice would be homemade chicken strips and fries. This may seem simple, but alas, this is untrue. Each and every fry simply cannot touch each other. Similar to riding in the back seat with your siblings. No touching is tolerated. Ever since Tim and I have been married I have been in search of the best, crispiest yam fry recipe. Almost four years in I have finally found it. Better yet, not a drop of oil is required. So along with these fries I have made spicy mayo (one of the rewards of working for so many Cactus Clubs). This dip I had perfected long ago. Since Jaeger has such an adventurous palate, he of course got his own yam fries and a few tastes of our favorite spicy dip.
Normally I wouldn't consider myself a person who wouldn't post a blurry photo, but we had limited chances to snap this face. Despite his hilarious reaction he quite enjoyed the spiciness and was amused by his own response. Every time I glance at these I have a good chuckle.
He has always been a kid who loves a lot of flavor. Hope these made you laugh. Happy hump day.

The following ingredients are for 3medium sized yams.
-Chop up the yams into larger sized fries, make sure they are all relativley the same size.
-Soak in water for minimum 30 minutes then rinse, to remove excess starch (helps with crispiness)
-dry fairly well, the dryer the crispier
-toss them in the whites of 2 eggs and your favorite spices (I used sea salt, pepper and garlic powder)
-place them on parchment paper on a large cookie sheet. No touching! this is also important for crispiness.
-15-20 minutes at 425 ( time depends on your size of fry)
-flip them all over individually (tedious yes)
-back in the 425 oven for another 15-20
-yummy yummy
